Directly responsible for the technical aspect of Cheesemaking, capital investment definition and overall responsibility of same. Responsible for the manufacture of safe, quality food observing all Good Manufacturing Practices, being alert for bio-terrorism and reporting off standard or abnormal conditions. Responsible for the proper operation and maintenance of weight control equipment (CQP's). Responsible for the proper operation and maintenance of pasteurizing equipment (CCP's and CQP's).
